There is not a whole lot to say about bacon wrapped asparagus other than it is DELICIOUS! I mean it is literally asparagus wrapped in bacon – no other fancy ingredients used or needed.
The key to this recipe is making sure your bacon gets nice and crisp, and the best way to do that is in the oven. There is nothing worse than eating any kind of vegetable wrapped in uncooked bacon! I also recommend lining a baking sheet with aluminum foil and placing a baking rack on top. The rack will help keep the bacon from sitting in its own liquid, which can hinder the crisping process.
1 bunch of asparagus (about 40 stalks), ends trimmed
8-10 slices of bacon
Preheat oven to 350 degrees. Trim about 1-2 inches off the bottom of each stalk. This should eliminate the stringy, tough portion of the asparagus. Wrap one piece of bacon around 4-5 stalks of asparagus.
Continue until all asparagus is wrapped in bacon.
Place on a rack on a baking sheet and cook for 15 minutes on one side. Flip and cook for 15 minutes on the other side. Add additional time if you would like your bacon crisper, however, be sure not to overcook the asparagus.
Serve as an appetizer, side dish or just an afternoon snack. Enjoy!
