THIS LEMON GARLIC ZUCCHINI IS INCREDIBLY FRESH TASTING AND EASY TO MAKE
In the heat of summer, I like to make fresh simple vegetable dishes, preferably ones I can grill. Now, I made this lemon garlic zucchini in the oven, but come on, it not really summer yet, give me a break! It can be easily cooked on the grill if you want to avoid turning that oven on. The instructions are the same, just replace oven with grill. With just a few ingredients, this is such an easy recipe to make, and is light and refreshing.
Ready? Let’s go! Preheat the oven to 375 degrees. After you’ve sliced the zucchini and lemon, and minced the garlic, wrap it in aluminum foil with the butter, and salt and pepper to taste. Be careful with the salt as the lemon will act similar to salt. There have been some studies out there that say lemon can be used as a replacement for salt, in some cases. I’m no health expert, but it sounds good to me! Either way, this recipe is perfect for those who want/need to reduce their salt intake. Unlike most of my salt-laden recipes.
Bake for 30-40 minutes. If you like your vegetables more crisp, reduce the cook time, and vice versa. As I mentioned earlier, this can be made on the grill as well, using the same instructions.
Remove the zucchini from the heat and unwrap to let steam out. Toss the lemons (or eat them if you’d like) and serve. Now you have the perfect fresh, healthy vegetable side dish. Ok, mostly healthy. I mean what is a veggie without a little butter?
Variations: Slice up some shallots or onions and add them, add a couple orange slices instead of lemon slices, or replace the butter with olive oil if you’re looking for a healthier dish.
