This coconut oil Roasted Parmesan Cauliflower is super easy to make and awesomely delicious, roasted to caramelized perfection! Coated with coconut oil and Parmesan cheese, this cauliflower gets nice and caramelized, and is ready in under an hour!

Crispy and caramelized around the edges. Roasted in a healthy serving of coconut oil. YUM guys. This Roasted Parmesan Cauliflower is the way cauliflower was meant to be eaten.
I mean seriously, what vegetable isn't just a little bit better when you add cheese? And those perfect little caramelized edges....I'll just pick those out and eat them all day.
This roasted cauliflower really is an amazing side dish. It's got great flavor, it's not too bad for you, and it's SUPER easy to make - just like this Air Fryer cauliflower or Instant Pot cauliflower.

Step By Step Instructions
First, preheat the oven to 400 degrees. Combine the coconut oil, Parmesan cheese, salt and pepper in a bowl and mix to combine.
Add the cauliflower and toss, ensuring the cauliflower is coated with the mixture.
Pour onto a parchment paper line baking sheet.
Roast for 40 minutes, until edges are browned and caramelized and cauliflower is tender when pierced by a fork.
Expert Tips
- Olive oil can be substituted for the coconut oil if desired;
- I recommend using the pre-packaged Kraft (or whatever brand) grated Parmesan cheese. It's not fresh, but it sticks waaaaay better;
- You can add ½ tsp. of garlic powder if desired.

Roasted Parmesan Cauliflower
Ingredients
- 1 lbs. cauliflower florets
- 4 tbsp. coconut oil melted
- 1 cup grated parmesan cheese
- 1 tsp. black pepper
- 1 tsp. sea salt
Instructions
- Preheat the oven to 400 degrees.
- Combine the melted coconut oil, Parmesan cheese, salt and pepper in a bowl.
- Add the cauliflower and mix with your hands to coat the cauliflower.
- Spread the cauliflower on a flat baking sheet and roast for 40 minutes, until edges are browned and caramelized and cauliflower is tender when pierced by a fork.
