This super tender, fall apart Vietnamese Instant Pot Fish Sauce Caramelized Pork takes less than a hour to make in the Instant Pot for delicious melt-in-your mouth morsels of pork!
I don’t know about you, but the first time I heard of fish sauce caramelized pork, I was not super excited. It actually sounded a little gross.
Good thing I’ll try anything, even if it sounds gross.
Plus, that was many years ago. Before I knew what good was. Before I realized that fish sauce is the BEST. THING. EVER.
Seriously guys. Fish sauce is just so incredibly awesome.
Now the first time I had Vietnamese fish sauce pork was at my favorite Vietnamese restaurant, Phuong Trang.

This stuff is amazing guys.
The traditional way to make fish sauce caramelized pork is to use pork spare ribs pieces, bones and all.
I went the boneless route for this recipe.
I mean, bones are fun and all, but I don’t always want to be picking up little pieces of pork and gnawing off the bones, over and over.
So these are made with boneless pieces of pork butt.

Before we get started, I want to express my love for my new Instant Pot. I got it for Christmas and it’s awesome. Ok, Ok, I returned a gift I got for Christmas and got this instead.
Same thing, right?
Anyways, this thing is so awesome, I don’t know how I lived my life this long without one. Read my full review of the Instant Pot if you haven’t decided whether the purchase is right for you or not.
I use the 6 quart 9-in-1 version. You can purchase it through the affiliate link below if you don’t already have one.
Now that we have all our ingredients and cooking method, we’re ready.
**If you don’t have an Instant Pot, a pressure cooker will work just fine, just brown the meat in a skillet before putting it in the pressure cooker.
First, season your pork generously with salt and pepper. Heat 1-2 tbsp. cooking oil in the Instant Pot on the “saute” setting (high). You’re going to add the pork and brown on all sides.
So you may need to do this in batches. Make sure you only lay the pork in a single layer at the bottom of the Instant Pot. You want a nice crust on the outside.
Once it’s browned, we add the brown sugar to start the caramelization process. You’ll want to be sure you keep stirring during this part ot keep the sugar from burning.
Once the sugar starts to turn a deep golden brown and cost the pork with a sticky goodness, we add the garlic, cook for a minute, then add the pork broth, black pepper, fish sauce and water.
And it’s time for the pressure! Pressure cook on high for 20 minutes and let the steam release naturally at the end.
But really, you can do the quick release too. I’m super impatient and always quick release.
Turn the Instant Pot back to saute, add the sliced onions, and simmer until the sauce has reduced and thickened to coat the pork. This should take 5-10 minutes.
Serve the pork with some steamed white rice and garnish with sliced green onion and fried shallots.
I love fried shallots as a garnish.

Instant Pot Vietnamese Pork (Caramel Pork)
- Heat the cooking oil in the Instant Pot on the "normal" saute setting.
- Add the pork (in 2-3 batches) and brown on all sides. Be sure not to crowd the pork or it won't properly brown.
- Place all the browned pork in the Instant Pot and add the sugar. Cook until the pork turns a golden brown color (about 5 minutes). Stir constantly to keep sugar from burning.
- Add the garlic and saute for 1 minute.
- Add the remaining ingredients (except sliced onions) and set the Instant Pot to pressure cook on high for 15 minutes. Let the steam release naturally for 10 minutes. Use the quick release to release any remaining pressure.
- Turn the Instant Pot to saute and add the onions. Simmer until sauce has reduced to a thickened glaze, about 5-10 minutes.
- Remove from heat, garnish with green onions and fried shallots, and serve with rice.
- Substitute chicken broth for pork broth if necessary.
- Cook the pork in batches to make sure it browns instead of steams.
- Make sure to stir periodically after adding the sugar to ensure it doesn't burn.
- After the pressure has released, you want to continue cooking it until all the liquid has been absorbed. The pork should be sticky and caramelized.
