Butternut Squash Curry

Saute the onions and garlic in ghee until soft

Add the squash and cook 3-5 minutes.

Add the fresh spinach and cook, stirring periodically to prevent sticking and burning, until spinach is wilted.

Stir in the ginger paste

Add the tomatoes and simmer for 2 minutes

Add the seasonings and broth and simmer for 3 minutes

Add coconut milk and simmer 5-7 minutes
