Perfect Roasted Duck

Sichuan peppercorns oranges garlic five spice ginger soy sauce Shaoxing wine coconut sugar crushed red pepper

Mix 'em all together

Rub it on the raw duck and stuff the duck with oranges

Let it sit in the fridge, uncovered, overnight to help dry out the skin.

Cover with foil and roast at 425F for 40 minutes

Baste then roast another 30. Remove foil and roast the last 10-20 to crisp the skin.

Brush with glaze, place back in for 5-10 minutes, until glaze caramelizes
