Lemon Creme Brulee

Heat the cream over medium heat and remove before it starts boiling. Add lemon zest and let sit, covered, until it cools 

Mix together egg yolks and sugar - mix in lemon juice.

Mix in the cooled cream mixture.

Pour mixture into 6 ramekins

Bake at 325F for 30 minutes. Let cool fully

Swirls sugar on top and brulee with a torch or under broiler
