Ingredients

Prep Time:  5 MNS.

Combine the marinade ingredients in a bowl and add the shrimp. Refrigerate for at least 2 hours and up to overnight.

If you're using dried shiitake mushrooms, soak them in hot water for about 20 minutes.

Heat the oil in a skillet and add the spinach, 1 teaspoon of salt and ½ teaspoon of sesame oil. Cook until the spinach is wilted and remove from heat.

Do the same with the zucchini and the shiitake mushrooms.
