Season the chicken legs with salt and pepper, and place on a wire rack over a baking sheet or large plate.

Heat a sous vide water bath to 160°F. Place the chicken legs in a vacuum seal sous vide bag and seal.

Cook chicken in the preheated water bath for 4 to 6 hours. You can cook them for a little as 2 hours.
