Sous Vide Fried Chicken

Season the chicken on both sides with some salt and pepper.

Place the chicken in a vacuum sealed bag. Cook in a 155F sous vide water bath for 90 minutes.

Mix together the buttermilk and hot sauce.

Mix the flour, cornstarch, Cajun seasoning and cayenne pepper

Pat the chicken dry, dip it in the flour, then dip it in the buttermilk.

Dip it back in the flour and place on a baking sheet.

Fry in 350F oil in a dutch oven for 3-5 minutes, until golden brown. Drain on paper towels.
