Sous Vide French Dip
Coat the round roast in the 2 tablespoons of salt and cracked pepper. Let it sit, uncovered, in the fridge overnight.
Brown the roast on all sides. Remove and set aside.
Simmer the remaining ingredients for about 5-10 minutes.
Place the liquid and meat in a vacuum seal bag and seal. Cook at 135F in sous vide cooker for 24 hours.
Ingredients for horseradish sauce
Mix all ingredients together well to make sauce.
Cook onions in butter until lightly browned
remove beef and strain juices (reserve for serving). Slice the beef in thin slices.
Place beef on toasted bun
Place onions on top
Top with horseradish sauce and serve with jus.
