Sous Vide Veal Chops

Season the chops with salt and pepper and vacuum seal

Cook in a 132F degree water bath for 3 hours. Place in ice bath for 10 minutes while making mushroom sauce. 

Whisk together the stock and miso paste

Cook mushrooms in a skillet 3-5 minutes.

Add the butter and garlic - cook until browned

Add the mirin

Add the broth and miso mix - simmer 

Stir in cream, simmer, remove from heat.

Sear veal on both sides over very high heat )30 seconds/side)
