Pineapple Chicken Curry

Brown the chicken in coconut oil - remove and set aside.

Add the carrot, onion and garlic to the skillet and cook 1-2 minutes

Add the curry paste and cook for 1-2 minutes.

Add the pineapple chunks, pineapple juice, red pepper and bamboo shoots and cook for 3 minutes.

Add the coconut milk and salt and simmer until thickened, about 3-5 minutes.

Stir in the chicken and garnish with cilantro and cashews
