Homemade Bacon Onion Jam

This Bacon Onion Jam might be the best things in the world - bacon and onions simmered with sugar, vinegar and mustard, this stuff is incredible easy to make in under 30 minutes.

  • Heat the butter in a saucepan over medium heat. Add onions and cook until starting to caramelize, about 10-15 minutes.
  • Add remaining ingredients and stir periodically to ensure the sugar does not burn.
  • Simmer until mixture has become thick and glossy (about 10-15 minutes). Remove from heat.
  • Let the jam cool and store in a covered jar in the fridge for up to one week.

Notes

  1. Using a thick cut bacon gives the bacon pieces a slightly chewy texture that is incredible.
  2. The recipe can easily be doubled, tripled, etc.
  3. Cut the onions as thin or chunky as you'd like. I t depends on how you prefer the consistency of the jam. I cut them a medium thickness. 
  4. Freezing instructions: Freeze in a freezer safe container for up to 6 months. Thaw in the fridge overnight.
