Instant Pot Wild Rice

  • Combine all the ingredients in the Instant Pot.
  • Pressure cook on high for 30 minutes. Use the quick release to release the pressure.
  • Serve immediately.

Notes

  1. If using unsalted broth/stock, you may want to add an extra ½ teaspoon of salt. Or, you can just salt the rice to taste after it's done cooking. 
  2. Wild rice or wild rice blend both work great for this recipe. I used a wild rice blend.
  3. A good quality stock will result in the best tasting rice. 
  4. I am cooking this rice at about 2000 feet. For anything above 5000 feet, you'll probably want to increase the water 2 tablespoons for every ¼ cup. 
  5. You can store leftovers in the fridge for up to 3 days in a covered container. Reheat in the microwave. I do not recommend freezing leftover wild rice. It becomes very mushy.
