Roasted Parmesan Cauliflower

Coated with coconut oil and Parmesan cheese, this cauliflower gets nice and caramelized, and is ready in under an hour!

Instructions

  • Preheat the oven to 400 degrees.
  • Combine the melted coconut oil, Parmesan cheese, salt and pepper in a bowl.
  • Add the cauliflower and mix with your hands to coat the cauliflower.
  • Spread the cauliflower on a flat baking sheet and roast for 40 minutes, until edges are browned and caramelized and cauliflower is tender when pierced by a fork.

Notes

  1. Olive oil can be substituted for the coconut oil if desired;
  2. I recommend using the pre-packaged Kraft (or whatever brand) grated Parmesan cheese. It's not fresh, but it sticks waaaaay better;
  3. You can add 1/2 tsp. of garlic powder if desired.
