Combine the melted coconut oil, Parmesan cheese, salt and pepper in a bowl.
Add the cauliflower and mix with your hands to coat the cauliflower.
Spread the cauliflower on a flat baking sheet and roast for 40 minutes, until edges are browned and caramelized and cauliflower is tender when pierced by a fork.
Notes
Olive oil can be substituted for the coconut oil if desired;
I recommend using the pre-packaged Kraft (or whatever brand) grated Parmesan cheese. It's not fresh, but it sticks waaaaay better;
