Ingredients

Instructions

  • Trim the ends off the green beans and rinse them under cool water.
  • Heat coconut oil over medium heat and add green beans. Cook for 1-2 minutes.
  • Add salt and pepper and cook another 5 minutes, stirring periodically.
  • Add coconut milk and chili garlic sauce. Bring to a boil, reduce heat and simmer, covered, for about 25-30 minutesThe beans should be tender but not mushy when done.
  • Remove from heat and add additional salt to taste if necessary.

Notes

  1. Cut the beans in half to make them easier to eat if desired. They won't look as pretty, but they are easier to eat!
  2. For a crisper bean, reduce the cook time by 5 minutes. For a softer bean, increase the cook time by 5-10 minutes.
  3. To make them spicier, add an additional 1-2 teaspoons of chili garlic sauce. You can also dice 1-2 Thai chilies and put them in with the beans.
