  • Blend the egg yolks and lemon juice in a blender until frothy - it should be almost double in size.
  • Add the melted butter, a little at a time, until it has all been incorporated.
  • Add the salt and cayenne pepper and give it one last pulse.

**Add more or less butter depending on the sauce thickness desired.
