Preheat the oven to 400 degrees.
Thinly slice the peeled potatoes, about ¼".
Melt the ghee, curry powder, minced garlic, pepper and salt in a microwave safe dish.
Place sliced potatoes in a baking dish and pour buttery curry mixture over potatoes and mix thoroughly.
Bake for about 40 minutes. Add additional time for a crispier potato.
