French Onion Soup: Rich, Simple, Delicious
This French Onion soup is super easy to make and absolutely rich and delicious!

- 4 medium onions thinly sliced
- 1/2 stick unsalted butter
- 1 bay leaf
- 1 cup white wine
- 7 cups beef broth
- 1 sprig thyme
- 1 tbsp. sherry
- 2 cloves garlic minced
- 1 tsp. fresh ground pepper
- 1 tbsp. salt or more to taste
- Swiss Jarlsberg, or Gruyere cheese (any flavorful cheese)
- Toasted bread
Melt the butter over medium-low heat and add the onions.
Cook until brown and caramelized, stirring often. It should take the onions about 20 minutes to reach the golden "brownness" we like to see.
Add garlic, sherry, white wine and bring to a simmer.
Add thyme, bay leaf, salt, pepper and beef broth. Adjust the salt content to taste.
Cover and simmer for 30 minutes. Add additional salt to taste.
Slice and toast the bread until very crispy.
Pour the broth into individual oven safe crocks.
Place the toasted bread over the broth and layer the top with the thinly sliced cheese.
Place under the broiler until the cheese is melted and browned.
