  • 4 medium onions thinly sliced
  • 1/2 stick unsalted butter
  • 1 bay leaf
  • 1 cup white wine
  • 7 cups beef broth
  • 1 sprig thyme
  • 1 tbsp. sherry
  • 2 cloves garlic minced
  • 1 tsp. fresh ground pepper
  • 1 tbsp. salt or more to taste
  • Swiss Jarlsberg, or Gruyere cheese (any flavorful cheese)
  • Toasted bread

  • Melt the butter over medium-low heat and add the onions.
  • Cook until brown and caramelized, stirring often.  It should take the onions about 20 minutes to reach the golden "brownness" we like to see.
  • Add garlic, sherry, white wine and bring to a simmer.
  • Add thyme, bay leaf, salt, pepper and beef broth. Adjust the salt content to taste.
  • Cover and simmer for 30 minutes. Add additional salt to taste.
  • Slice and toast the bread until very crispy.
  • Pour the broth into individual oven safe crocks.
  • Place the toasted bread over the broth and layer the top with the thinly sliced cheese.
  • Place under the broiler until the cheese is melted and browned.
