Ingredients

Instructions

  • Place ingredients (except bacon) into food processor and blend until the mixture is smooth. Should only take about 30 seconds TOPS.
  • Add the crumbled bacon and pulse until the bacon is distributed throughout the sauce. It's ok if there are pieces of bacon - it gives the sauce texture!

Notes

  1. To reduce the spice level, use only half of the chipotle pepper, or even just use a tablespoon of the adobo sauce. Then you get the flavor without too much of the spice.
  2. Cook the bacon really crispy so it's easier to crumble.
  3. If you'd like this to be more of a sauce, add additional water and/or cream (if you prefer an ultra creamy texture) until it reaches your desired consistency.
  4. Spice this dip up a bit and top it with crumbled cotija cheese, additional bacon, diced tomatoes (or pico de gallo) or diced jalapeno. Be creative!
