Jerk BBQ Dipping Sauce:

  • 1/2 cup BBQ sauce
  • Reserved marinade


  • Combine marinade ingredients and let sit for 1-3 hours.
  • Place eggplant pieces on skewers. Drizzle with melted coconut oil.
  • Heat grill to 400 degrees. Grill eggplant skewers for 3-5 minutes per side.

Jerk BBQ Sauce:

  • Mix ingredients and serve with eggplant skewers.
