Roasted Parmesan Cauliflower
Coated with coconut oil and Parmesan cheese, this cauliflower gets nice and caramelized, and is ready in under an hour!
Servings 6 people
Preheat the oven to 400 degrees.
Combine the melted coconut oil, Parmesan cheese, salt and pepper in a bowl.
Add the cauliflower and mix with your hands to coat the cauliflower.
Spread the cauliflower on a flat baking sheet and roast for 40 minutes, until edges are browned and caramelized and cauliflower is tender when pierced by a fork.
- Olive oil can be substituted for the coconut oil if desired;
- I recommend using the pre-packaged Kraft (or whatever brand) grated Parmesan cheese. It's not fresh, but it sticks waaaaay better;
- You can add ½ teaspoon of garlic powder if desired.
