Instructions

  • Place the ginger, green onions, dried shiitakes, dried shrimp and soy sauce in a large pot with the chicken broth and bring to a boil. Simmer for 20 minutes. Taste the broth and add additional salt to taste. If you used unsalted or homemade broth, you may need to add additional salt
  • While the broth is simmering, cook the wontons and noodles according to the instructions on the package(s) and set aside.
  • Strain the broth to remove all the aromatics and place back on the stove to keep warm.
  • Place some noodles, wontons and char siu (optional) in a bowl and ladle the broth over the top.
  • Garnish with green onions and fried wonton strips and serve.

Notes

  1. Be sure to taste the broth before adding salt. Some store bought broths have a lot of salt, and homemade will typically have none. Salt to your taste preference
  2. For a clearer soup, strain the broth through cheesecloth to remove any particles.
  3. To make it a full meal you can add pieces of chicken, turkey, pork, tofu, shrimp, etc.
  4. Serve it with a spicy chili oil like this Homemade Chili Oil from Woks of Life - this stuff is sooooo good!!
