The base of this gumbo is made with homemade chicken stock and it’s an extra rich stock thanks to the whole chicken that goes into making it!


Whole chicken Onions Celery stalks Bay leaf Sprigs fresh thyme Peppercorns Oil Flour Andouille sausage sliced Bell pepper Cajun seasoning Chili powder Dried thyme Salt

Combine the chicken, quartered onion, quartered celery stalk, bay leaf, fresh thyme and peppercorns in a large pot or Dutch oven.


Fill the pot with water, covering the chicken, or as close as you can get to covering it.

Heat the pot to boiling, then reduce to a simmer.

Cover and simmer for 2 hours.
