  • Arrange the tomato slices on a baking sheet and cover each with blue cheese crumbles.
  • Sprinkle the sugar across all tomatoes.
  • Drizzle lightly with olive oil and put under the broiler until bubbling and just starting to brown.
  • Serve immediately.


  1. Use large tomatoes, at least 3" in diameter for the best result. 
  2. The tomato slices should be about ¼-1/2" thick for the best results.
  3. Watch the tomatoes under the broiler to be sure they don't burn.
  4. They can also be prepared in a toaster oven under the broiler setting.
  5. Use your favorite blue cheese crumbles for simplicity, or buy a wedge of blue cheese and crumble it yourself.
