  • Heat the cooking oil in a skillet over medium heat and cook the chicken until it is no longer pink. Make sure the chicken crumbles in small pieces.
  • Add the garlic and water chestnuts when chicken is almost done.
  • Add the remaining ingredients (except chili oil, lettuce and green onion). Mix well and cook for another 1-2 minutes, until thickened.
  • Remove from heat and serve mixture spooned into the lettuce pieces drizzled with chili oil (optional) and green onions.

Notes

    1. Use butter lettuce for the perfect shape and size. Regular lettuce can be substituted, but it won't be as easy to wrap.
    1. When cooking the chicken, make sure it crumbles in small pieces (use a fork). Stirring often will help keep the chicken separated.
    1. For extra spice, consider adding 1-2 teaspoons of chili garlic sauce or sambal.
    1. Top the wraps with a sweet chili sauce or a drizzle of Sriracha.
    1. You can substitute ground turkey or ground pork as well for the chicken.
    1. Use chopped chunks of dark meat chicken for an ultra moist version of this dish.
    1. Use more or less Szechuan peppercorns as desired.
    1. Substitute dry sherry for the Shaoxing wine if needed.
