Fish Sauce Caramelized Pork

  • 2 lbs. pork butt cut in 1" pieces
  • 2 tbsp. fish sauce
  • 4 tbsp. brown sugar
  • 1 tsp. black pepper
  • 3 cloves garlic minced
  • 1/2 cup pork broth
  • 1/2 cup water
  • 1 small onion sliced
  • Green onions for garnish
  • Fried shallots for garnish
  • 1-2 tbsp. cooking oil
  • salt and pepper


  1. Heat cooking oil in the Instant Pot over high.
  2. Season the pork with salt and pepper. Add pork (in 2 batches) and brown on all sides.
  3. Add the sugar and cook until pork turn a golden brown color (this means it's caramelized). Stir constantly to keep sugar from burning.
  4. Add the garlic and saute for 1 minutes.
  5. Add the remaining ingredients (except onions) and set the Instant pot to pressure cook on high for 20 minutes. Let the steam release naturally for 10 minutes.
  6. Turn Instant Pot to saute and add onions. Simmer until sauce has reduced to a thickened glaze, about 5-10 minutes.
  7. Remove from heat, garnish with green onions and fried shallots, and serve with rice.
