Fish Sauce Caramelized Pork

  • 2 lbs. pork butt cut in 1" pieces
  • 2 tbsp. fish sauce
  • 4 tbsp. brown sugar
  • 1 tsp. black pepper
  • 3 cloves garlic minced
  • 1/2 cup pork broth
  • 1/2 cup water
  • 1 small onion sliced
  • Green onions for garnish
  • Fried shallots for garnish
  • 1-2 tbsp. cooking oil
  • salt and pepper


  • Heat cooking oil in the Instant Pot over high.
  • Season the pork with salt and pepper. Add pork (in 2 batches) and brown on all sides.
  • Add the sugar and cook until pork turn a golden brown color (this means it's caramelized). Stir constantly to keep sugar from burning.
  • Add the garlic and saute for 1 minutes.
  • Add the remaining ingredients (except onions) and set the Instant pot to pressure cook on high for 20 minutes. Let the steam release naturally for 10 minutes.
  • Turn Instant Pot to saute and add onions. Simmer until sauce has reduced to a thickened glaze, about 5-10 minutes.
  • Remove from heat, garnish with green onions and fried shallots, and serve with rice.
