These Instant Pot Braised Beef Short Ribs are melt-in-your-mouth, fall-off-the-bone tender, seasoned with Brazilian style spices and served with a fresh, homemade chimichurri.

  • Let the short ribs come to room temperature and season generously with salt and pepper. Heat the coconut oil on the saute setting on the Instant Pot.
  • Brown the short ribs on all sides. Turn off heat, remove the short ribs and set aside. Drain the excess fat from the pan.
  • Add the vinegar, mirin, lime juice, garlic and tomato paste and stir to make a sauce. Add the short ribs back into the pan and spoon the sauce over top. Sprinkle with the churrasco seasoning.
  • Set the Instant Pot to high pressure for 50 minutes. Once the ribs are done cooking, let the pressure release naturally for 10 minutes, then use the quick release to release any remaining pressure.
  • Season with salt and pepper and serve over jasmine rice with chimichurri sauce.
