In a stock pot, add fresh pealed cubed peaches,honey, sugar and lemon juice to boil.
Once boiling remove from and allow to least 30 minutes. Once cooled add to blender or food processor and blend well.
Ginger Peach Moctail
In 8oz drink glass. Add 2 oz Peach mixture and 1oz basil simple syrup.
Add desired amount of ice.
Top with Ginger beer and enjoy.
Basil Simple Syrup
In a saucepan, add one cup of sugar and one cup of water and bring to a boil. Once it starts to boil, remove from heat and add basil on top. Allow too steep for 30 minutes with the lid on.
After 30 minutes, remove the lid and basil and allow it to cool to room temperature.
