Indian Gazpacho Recipe (Refreshing Spiced Cold Tomato Soup)
This refreshing Indian gazpacho is packed with tomatoes, cucumber, cumin, coriander, ginger, fresh mint, and lime for the ultimate cold summer soup!

English cucumber
peeled, light chop (about 1 large English cucumber)

Roma Tomato
peeled (about 6 Romas)

Tomato juice

Instructions
Place cucumber, peeled tomatoes, tomato juice, onion, garlic, cumin, coriander, and ginger in a food processor and blend well.
Once blended, taste, and add salt, pepper, and red wine vinegar to taste. Mix again.
Place in an airtight container and refrigerate for 2 to 24 hours.
Serving: add soup to bowls, top with ½ lime juice for each bowl and ½ tablespoon fresh mint, then enjoy.
