Popsicle mold If you don't have popsicle molds you can always use ice cube trays
Ingredients
1canfull fat coconut cream
¼cupmint syrupsee below for a recipe to make your own
2tablespoonof lime peel zest
2tablespoonof fresh lime juice
One handful of fresh mint leavesabout one cup without stems(you will need 2 cups total)
1cupwater
1cupwhite granulated sugar
Instructions
Combine everything into a small saucepan and simmer on low heat for five to seven minutes. Remove from heat and let stand covered for 20 to 25 minutes until all the flavors combine.
When the mixture cools. Strain the popsicle mixture through a mesh strainer, discarding the pieces of mint and lime zest, and pour the remaining liquid into your molds. Place your popsicle sticks and freeze overnight. Enjoy!
