Coconut Lime Virgin Mojito Popsicles!
Ingredients
- 1 can full fat coconut cream
- ¼ cup mint syrup see below for a recipe to make your own
- 2 tablespoon of lime peel zest
- 2 tablespoon of fresh lime juice
- One handful of fresh mint leaves about one cup without stems(you will need 2 cups total)
- 1 cup water
- 1 cup white granulated sugar
Instructions
Combine everything into a small saucepan and simmer on low heat for five to seven minutes. Remove from heat and let stand covered for 20 to 25 minutes until all the flavors combine.
When the mixture cools. Strain the popsicle mixture through a mesh strainer, discarding the pieces of mint and lime zest, and pour the remaining liquid into your molds. Place your popsicle sticks and freeze overnight. Enjoy!
