Ingredients
2
medium summer squash
1
tablespoon
olive oil
1
teaspoon
cracked black pepper
1 ½
teaspoons
sea salt
Instructions
Start by washing the squash and cutting the ends off. Slice the squash lengthwise in ¼" slices and lay the slices on a baking sheet.
Drizzle with olive oil, salt and pepper.
Grill squash 2-3 minutes on each side at about 400°F, until there are char marks, but not long enough to get mushy.
Notes
Brush the grill with oil before adding the squash to prevent it from sticking.
The squash should have nice grill marks on both sides when done - make sure your grill is hot enough before putting the squash on.
For ease, you can also use a grill basket and cut squash into pieces instead of slices.
