These sous vide egg bites are made with meaty bacon, nutty gruyere and are even better than Starbucks egg bites!
They only take 5 minutes to put together, then rest of the cook time is hands off!

While we love these oven baked egg cups with hashbrowns, these sous vide egg bites are a whole different world of goodness.
And yes, you heard it right...these are BETTER than Starbuck's egg bites. At least in my humble opinion 🙂
Light, fluffy, and just absolutely perfectly cooked, you can't go wrong when you make these - that's the best part about cooking food sous vide!

What is Sous Vide?
Sous vide is basically a method of cooking using what is called an immersion circulator. This immersion circulator circulates water in a temperature controlled water bath at a certain temperature to perfectly cook your food every time.
Because the temperature doesn't change, and it keeps your meat (or dessert, veggies, etc.) at the same temperature, your risk of overcooking becomes very minimal.

Why This Recipe Works
- Cooking them sous vide eliminates the risk that the eggs become overcooked and dry.
- The bacon adds the perfect meaty, rich umami flavor to the eggs.
- Cream adds a nice richness to the eggs, cream cheese adds tanginess and the Gruyere takes it over the top for that extra nutty, umami flavor.
- They are ultra easy to make, with most of the cooking being hands-off.
- Great for parties, brunches, or make-ahead breakfasts for the week!
Ingredients

We are lucky enough to get regular farm fresh eggs from the in-laws, but if you're not so lucky, try to get the freshest eggs from the store that you can to get the best results.
Gruyere is a hard cheese that is almost like a combination of swiss and parmesan - it has a nice nutty flavor and is packed with umami. Substitute Parmesan is you don't have gruyere.
I have started using the microwavable bacon from the store for recipes like this so I don't have to dirty a whole pan and it works great. It crisps up well and is quick and easy.
You can also make this sous vide bacon that comes out perfect and easy to crumble if you have some extra time on your hands!
You will also need 8-4 ounce jars with lids and a blender to make these egg bites.
Step By Step Instructions
Heat a sous vide water bath to 170F degrees.
Spray 8-4 ounce mason jars with non-stick cooking spray.
Crumble the cooked bacon and divide it evenly among the 8 jars.
Combine all the remaining ingredients (except green onions) in a blender and blend until smooth and slightly fluffy, about 1-2 minutes.
Fill each jar about ¾ full with the egg mixture and top with a sprinkle of green onions.
Screw the lids onto the jars until just "finger tight." Basically, once you feel the lid grab the jar, stop tightening. You may feel like it's not tight enough, but once the lid grabs you are good to go. **if you tighten too much your jars could crack in the water bath.
Place the jars in the water bath and cook for 1 hour. **I put my jars in once the water bath once it reached 120F degrees so the jars would not be shocked by the temperature difference and crack.
Remove from the water bath with tongs and let cool until they can be touched.
Remove the lids and serve straight out of the jar. Garnish with chopped chives, peppers and/or hot sauce if desired.
How to Serve Sous Vide Egg Bites
We love our egg bites served many different ways - they are not just for breakfast!
- Alongside this strawberry spinach salad for a low carb lunch
- Serve alongside these lemon ricotta pancakes, cornmeal pancakes or cornmeal blueberry pancakes for some added protein
- Try this cilantro chimichurri or Argentinian chimichurri on top
- I like to eat them with this breakfast fried rice or these air fryer hash browns on the side
- Serve them with air fryer biscuits
Expert Tips
- Blend the egg bites for at least 1-2 minutes to allow them to get slightly fluffy - this keeps them lighter while cooking.
- Do not forget to spray the jars with non-stick spray. Otherwise they will stick to the jars.
- Don't overtighten the jars or they may crack while cooking. Make sure you stop tightening as soon as feel the lids grab the jars.
- Place the jars in the water bath at 120F degrees to avoid cracking from temperature shock.
- For a meatless option, you can omit the bacon. You may need to add additional salt to make up for the bacon.
- Substitute smoked or breakfast sausage for bacon if desired.
Add-ins and Options
These egg bites are so versatile which is another reason I love them. Here are some ideas for add-ins before you cook them:
- Sauteed onions or peppers (make sure they are chopped finely so they are not too chunky in the jar)
- Diced/minced jalapeno
- Sauteed minced garlic
- Sauteed mushrooms in butter
- Chopped roasted red peppers or even these roasted jalapenos
- Sauteed spinach or kale, chopped
- Top with this cured salmon right before serving.
Frequently Asked Questions
Sous vide egg bites contain a high amounts of protein, which has many health benefits. If you are following a high protein, low carb diet, these egg bites are perfect. They do however, also contain a high fat content which can be considered unhealthy is not eaten in moderation.
It is likely that they are being cooked at a temperature that is too high or for too long. This is common when cooking egg bites in the oven. Cooking egg bites sous vide will result in the perfect consistency every time.
If you blended the mixture well before cooking, they should stay fluffy when served immediately. As time passes, the air will naturally seep out of the egg bites, causing hem to start to collapse.
Storage and Reheating Instructions
Store these egg bites in the fridge right in the jars for up to 5 days. You can reheat them in a 150F degree water bath to maintain their fluffy consistency.
You can also reheat in the microwave, but they do come out more dry and rubbery.
I don't recommend freezing them as it affects the consistency of the eggs.
