This crawfish bisque recipe is rich, creamy, and packed with bold Louisiana flavor from crawfish tails, Cajun seasoning, seafood stock, and cream. This homemade crawfish bisque tastes like something straight from a New Orleans restaurant while still being simple enough for a cozy weeknight dinner. If you love Cajun seafood recipes, try this Crawfish Etouffee for another Louisiana favorite.

OMG guys. This is it. This is the stuff. This crawfish bisque is one of the loves of my life, along with this creamy crab and corn bisque and this amazing prawn bisque of course.
So rich, so creamy, perfectly spicy and just AMAZING, and on the table in 30 minutes? YES PLEASE!
And don't fret, if you don't have/can't find crawfish, you can totally make this with shrimp or fish or any kind of seafood.
If you're a HUGE crawfish fan like me, you'll probably like this incredible Crawfish Pie or this Louisiana Seafood Gumbo.

Why This Cajun Crawfish Bisque Recipe Works
- Making a roux first helps to give the bisque that rich and creamy texture. If you've never made a roux, check out this post on How To Make a Roux for some great tips.
- Blending the soup with an immersion blender gives it the smooth texture of a bisque.
- Using tomato paste instead of tomatoes gives it the perfect amount of rich tomato flavor without the bulk of using tomatoes.
- Adding cream at the end helps to bring the bisque together with an extra layer of richness.
- Seafood stock adds authentic Louisiana flavor.
Why This Louisiana Crawfish Bisque is Better Than Restaurant Versions
Many restaurant bisques rely heavily on cream without enough seafood flavor. This homemade crawfish bisque balances creamy texture with rich seafood stock, Cajun seasoning, and tender crawfish tails for a much deeper flavor.
What is My Take on Creamy Crawfish Soup?
The best creamy crawfish soup should feel luxurious without becoming too heavy. I love using a light roux and blending the soup until smooth before adding the crawfish tails. The result is a rich seafood soup with bold Cajun flavor that still lets the crawfish shine. For another comforting Cajun dish, try this Chicken and Sausage Gumbo.
Ingredients
Crawfish is obviously the main ingredient for this recipe. You will need one pound of crawfish tails. I have a market near me that sells packages of crawfish tail meat, which is super convenient. And I've also gotten it at Walmart!
If you can't get the tail meat, many seafood counters have whole crawfish. You can buy that and just remove the tails and peel them.
When preparing the aromatic base of this rich crawfish bisque, using a sturdy cutting board makes it easy to safely chop onions, garlic, and peppers into the fine pieces needed for a smooth, flavorful soup.
If all else fails, you can buy crawfish tail meat in bulk on Amazon. And don't worry, there are plenty of other crawfish recipes here on the site you can use them for, like this amazing crawfish gumbo or this crawfish boil!!

Key Ingredients
- Crawfish Tails - Crawfish tails provide sweet delicate seafood flavor typical of Cajun seafood soup.
- Seafood Stock - Seafood stock creates the deep savory flavor essential to a seafood bisque recipe.
- Cajun Seasoning - Cajun seasoning adds warmth, spice, and Louisiana flavor.
- Heavy Cream - Heavy cream creates the signature silky texture of Southern seafood soup.
Step By Step Instructions

Step1: Heat the butter and flour in a Dutch oven over medium heat, stirring continuously to make a light brown roux (3-5 minutes). **Learn more about How to Make a Roux

Step2: Add the onion, garlic and green pepper and cook for about 2-3 minutes, until vegetables start to soften.

Step3: Then add the tomato paste and sherry and cook for 1-2 minutes. The mixture will be thick.

Step4: Add the Cajun seasoning, tarragon and seafood/fish stock slowly, stirring while adding a little at a time to ensure the roux doesn't get lumpy. Bring to a boil over high heat, then reduce the heat and simmer for 10 minutes over medium heat.

Step5: Use an immersion blender to blend the soup. Blend for 3-5 minutes, or until the soup is creamy. **If you don't have an immersion blender, remove the soup from the heat and blend in batches. Place blended soup back in the Dutch oven and heat to a simmer.
**Be careful when you blend hot liquid - the pressure from the heat can cause your blender lid to explode off, causing quite a mess.

Step6: Add the crawfish tails and cream and simmer for 5 minutes. Reserve a couple crawfish tails for serving if desired. Serve in bowls garnished with croutons, green onions and reserved crawfish tails.

How to Get Rich Seafood Soup Texture
- Stir the roux continuously to prevent burning.
- Warm the stock before adding it.
- Blend thoroughly for a silky texture.
- Simmer gently after adding cream.
- Avoid boiling once the cream is added.
Common Mistakes to Avoid
- Burning the roux
- Adding cold stock too quickly
- Overcooking crawfish tails
- Boiling after adding cream
- Under-seasoning the soup
Variations
- Add extra hot sauce for spicy crawfish soup.
- Use shrimp instead of crawfish.
- Add crab meat for a richer seafood bisque recipe.
- Garnish with fresh parsley or chives.

What to Serve With Crawfish Bisque Recipe
I like to serve this crawfish bisque with crusty pieces of French bread for dipping. Bisque is often served as a starter for a meal. Try these options:
- Make your own French Bread for serving - this may be more time consuming but fresh baked bread is the BEST;
- Try this Shrimp Po' Boy from African Bites or these Jalapeno Cheese Hush Puppies as a great side;
- These Crawfish Egg Rolls would be just incredible with this soup;
- Serve it with this Blackened Catfish and Dirty Rice to make a whole meal;
- For a lighter meal, serve it with this Blackened Shrimp Salad;
- For a large gathering try this Homemade Crawfish Boil.
Expert Tips:
- When cooking the flour and butter to make a roux, make sure to stir constantly to prevent it from burning. It is done when it is a very light brown/cream color. It should take 3-5 minutes.
- Make sure to add the WARMED seafood stock slowly to the mixture while stirring. This helps prevent lumps from forming.
- When using the immersion blender, blend for 3-5 minutes, or until the soup is creamy. It's ok if there are a few small chunky pieces.
- If using a stand blender instead of an immersion blender, make sure to let the liquid cool slightly before blending; otherwise the heat can make the lid explode off causing a huge mess.
- Use Louisiana crawfish tails if possible.

Frequently Asked Questions
Typically, the difference between a soup and a bisque is the use of cream. Bisque is usually made with a seafood stock and cream and is pureed to a creamy consistency.
Creamy Cajun soup can be frozen, but the texture may slightly change after thawing.
Yes, frozen crawfish tails work very well in this crawfish tail recipe.
This spicy crawfish soup has moderate heat, but you can adjust the Cajun seasoning and hot sauce to taste.
Storage + Reheating + Make Ahead + Meal Prep
- Store leftover crawfish soup recipe in the refrigerator for up to 3 days.
- Reheat gently over low heat to prevent the cream from separating.
- This homemade crawfish bisque can also be made ahead for parties or holiday meals.

Can u help me understand what type of sherry: cooking or drinking and if drinking red or white?
Tara says
Hello Laura, Here is a great article to help understand different types of sherries. https://www.masterclass.com/articles/whats-the-difference-between-cooking-sherry-dry-sherry-and-regular-sherry-plus-4-easy-recipes-using-sherry
Laura Crowe says
Which would u recommend? Sorry a little over my head:)
Tara says
Hello Laura, You can use Taylor Dry Sherry for this recipe. I hope this helps.
Landon C. says
I've made this recipe a couple times now and I think I have some modifications that make it come out a bit better.
First, I simmer for a much longer time before adding cream, probably 20-30 minutes.
Second, before blending, I pour some of the juice from the crawfish as well as about 1/8-1/4 of a cup of the tails. When they're blended up with the veggies it makes the bisque so much more rich.
Third, I dice up my remaining tails into 3 different sizes, small, med, and whole tails. It really helps to incorporate them into each bite.
Fourth, (and you may find this controversial) but after letting it do the final simmer, I will add a pinch of MSG to help bring out the umami flavor.
Overall, probably the best bisque recipe I have ever tried, highly recommend.

Bri says
It seems a little watery for it being a soup :/
Danielle says
Hmmm, I'm sorry it seems watery. I haven't had that issue, especially with use of the roux and cream. You might want to just simmer it longer as that will allow it to thicken up also.
Mads says
very good recipe but insructions did not mention heavy whipping cream!
Danielle says
I'm glad you liked it! Adding the cream is actually in step 6 - it's added along with the crawfish tails at the end.
Devin Aaron says
Woooo! This was fantastic. Had some leftover crawfish heads and didn't quite know what to make with them. Made a broth and got lost. This recipe got me back on track and I gotta say this was absolutely delicious! Didn't use any sherry and subbed the crawfish tails with shrimp and added some corn. Thank you for sharing. 🙂
Danielle says
That's so wonderful to hear - I'm so glad you liked it!

Do you get seafood stock from the store or was it premade?
Danielle says
You can use either. I typically use store bought as I don't always have seafood stock on hand.
Rae Day says
This recipe is spot on delish!
Danielle says
So glad you liked it!!
Jasmine fikes says
What kind of sherry did you use?
Danielle says
Any kind of dry sherry is fine. I use whatever is cheapest at the grocery store. I typically find it in the wine aisle.
Amelina Marie Taylor says
Mine didn't thicken up and I did everything that you said.
Danielle says
You may want to try simmering it longer to thicken it up. I haven't personally had issues with it not thickening using the roux and tomato paste (they both help to thicken). Was the roux thick when you made it? You could also try using less stock if you want a thicker broth.

Danielle, what kind of sherry should I use? Thanks!

I prefer a dry sherry, but a slightly sweet one is fine too. I don't recommend using the sherry cooking wine as it has a lot of salt.
