This Bacon Onion Jam might be the best things in the world - bacon and onions simmered with sugar, vinegar and mustard, this stuff is incredible easy to make in under 30 minutes.
The boyfriend inhaled an entire jar of this bacon jam in a short period of time. I could barely hide my disappointment. But guys, this bacon jam is so easy to make, I could just whip up some more.
I mean, who can say no to big chunks of chewy bacon and onion all caramelized together in a sauce of sugar, vinegar and mustard - plus a touch of cayenne for s little kick? It's to die for. I mean technically you serve it with things like Chicken Liver Mousse, dried beef dip and Baked Brie or even these bagel bites.
But really, you can just eat this stuff with a spoon. Seriously. With a spoon. It's that good.
Ingredients to Make Bacon Onion Jam
I like to use a thick cut bacon for this recipe. Otherwise, any kind of bacon will work fine.
You can use either grainy or smooth Dijon mustard, but I personally choose to use the smooth.
Other ingredients like sugar, onion, and vinegar are also used. A complete list of ingredients is included in the recipe card.

Step By Step Instructions
Heat the butter in a saucepan over medium heat. Add onions and cook until starting to caramelize, about 10-15 minutes.
Add remaining ingredients and stir periodically to ensure the sugar does not burn.
Simmer until mixture has become thick and glossy (about 10-15 minutes). Remove from heat.
Let the jam cool and store in a covered jar in the fridge for up to one week.

I wonder if you can can this stuff? If so, how long and water bath or pressure cooker?
Danielle
I'm sure you can, but I am not a canning expert and have not tried canning it. I don't know if a water bath is enough.
