You guys, this recipe is so quick and easy to make. It requires very little prep time and all you need is a simple seasoning that’s made with pantry staples.
Potatoes are ideal for the air fryer. They get crispy on the outside, fluffy in the middle and usually cook in half the time.

Why this recipe works
- While oven roasted baby potatoes can take as long as 45 minutes (like these crispy roasted potatoes), the air fryer cuts that time in half.
- The potatoes get ultra crispy on the outside but you need very little oil thanks to the hot air circulation of the air fryer.
- There’s no need to peel, parboil or soak the potatoes, so prep time is minimal for this recipe!

What is an Air Fryer?
The Air Fryer is a healthier alternative to frying foods. It's basically a small, powerful convection oven that sits on your countertop.
It circulates hot air around the food you're cooking, which is what gives it that crisp texture that mimics fried food (without all the grease).

You’ll need 12 ounces of white baby potatoes for this recipe. To ensure they air fry quickly, you’ll want to cut them in half.
To get the potatoes extra crispy on the outside, they’re coated with 1 tablespoon of oil. You can use your preferred oil.
The potatoes are seasoned with a simple mix of salt, pepper, garlic powder and paprika. Feel free to change things up with different dried herbs and spices. Sometimes we like to add a little Cajun seasoning to spice up the potatoes!
Step by step instructions
Combine all the ingredients in a bowl and mix well to coat the potatoes.
Cook at 400F degrees for 15-20 minutes, until browned and crisp on the outside.
Garnish with parsley and serve with ketchup, remoulade sauce or ranch dressing.
Expert tips
- You don’t need to peel the potatoes, but you’ll want to give them a quick rinse and scrub them clean if necessary.
- Be sure to pat the potatoes dry before seasoning them. Wet potatoes will not get as crispy in the air fryer.
- To ensure even cooking, make sure your potatoes are all roughly the same size.
- You can keep the potatoes whole, but you’ll need to increase the air frying time.
- For extra crispy potatoes, arrange them in the air fryer basket in a single layer and don’t overcrowd them.
- Depending on the size of your air fryer, you may need to air fry the potatoes in batches.
- If the potatoes are browning too much on one side, give the basket a shake to rotate the potatoes around.
- If your air fryer requires preheating, you’ll want to do this before adding the potatoes.

Common questions
This recipe will work with white, yellow or red baby potatoes. If you can’t find any mini potatoes, feel free to use full size potatoes and just cut them in quarters.
The skin on baby potatoes is very thin, so you don’t need to peel them. Besides, the skin gets extra crispy and delicious in the air fryer!
Some recipes call for parboiling or blanching the potatoes first as a way to ensure they get crispy on the outside and fluffy in the middle. I’ve found that the air fryer achieves these results without boiling the potatoes first.
I usually soak my potatoes when making french fries because it helps release the starches and crisp them up. I skip this step in this recipe as the air fryer gets the potatoes extra crispy without soaking them first.
You can serve these baby potatoes for any meal of the day. They’re the perfect side dish for dinner with this sous vide pot roast or Instant Pot lemon chicken. You can even serve them for breakfast or brunch with this ultimate bagel breakfast sandwich!
Storing and reheating leftovers
Air fried baby potatoes are best enjoyed hot and crispy straight out of the air fryer. If you have leftovers, you can store them in an airtight container in the fridge for up to 3 days.
To reheat, just pop the potatoes in the air fryer at 400F degrees for 3-5 minutes, or until the outside is crispy again.
