I don't know about you guys, but I am always up for melt-in-your-mouth beef. That perfectly tender, flavor packed meat that just falls off the bone and is deliciously succulent and juicy...
Gimme all the braised short ribs - we love these sous vide short ribs too!! (These sous vide beef ribs are pretty darn good as well).
Plus, these Instant Pot Beef Short Ribs are super easy to make (you know me - that's how I like it) with your trusty Instant Pot. I mean, they are ready in an hour.
AN HOUR??? For delicious, fall-off-the-bone tender beef short ribs. Life doesn't get any better.

The Ingredients
This is another one of those recipes where you likely have most, if not all of the ingredients in your pantry already. The exception may be the churrasco seasoning, but I've included a link below (as well as a link to the other ingredients) so you don't have to hunt them down in the store (affiliate links):
- Coconut oil
- Beef short ribs
- Apple cider vinegar
- Mirin
Tomato paste
- Beer
- Lime
Churrasco seasoning
- Chimichurri
- this is a link to buy it on Amazon for convenience, but I HIGHLY recommend making your own.
If you can't find the Churrasco seasoning, you can also use the McCormick brand Brazilian Steak Seasoning (affiliate link).
**I also HIGHLY recommend serving these short ribs with chimichurri sauce. While you can buy it in the store, making your own is just so much better. Check out my recipe for homemade chimichurri**
What are Short Ribs?
Short ribs are just that - they are a short portion of the rib bone covered in meat. The meat tends to be tough and is best when slow cooked (braised) to allow it to become tender and melt-in-your-mouth. Learn more about beef short ribs.
Step By Step Instructions
Let the short ribs come to room temperature. This will help them brown easier and create that crust that keeps the juice in while braising. Season them generously with salt and pepper.
Heat the coconut oil in a cast iron skillet and add the short ribs. Brown on both sides (about 3-4 minutes/side). It's very important to sear the short ribs before pressure cooking them.
Searing them allows a crust to form which helps them to become more tender as well as adding a TON a flavor.
Remove the ribs from the cast iron skillet and place in the Instant Pot.
Add all the remaining ingredients and mix to combine. Make sure to spoon the sauce over top of the ribs before putting the lid on.
Set the Instant Pot to pressure cook on high for 60 minutes. Let the pressure release naturally for 15 minutes, then use the quick release to release the remaining pressure.
Serve these Instant Pot Beef Short Ribs over black beans (pictured), creamy polenta or steamed white rice. See below for more serving ideas.
Expert Tips
- Be sure to season the short ribs with the salt and pepper before searing - this is what helps to give them incredible flavor;
- Brown the short ribs in a cast iron skillet for the best results. They can be browned directly in the Instant Pot, but I find the results to be better in cast iron. Plus, the Instant Pot tends to stick terribly;
- Mix the ingredients (except the rib) together before pouring them into the Instant Pot with the short ribs to make a more uniform sauce;
- Be sure to let the pressure release naturally first - releasing the pressure too early can cause the short ribs to become tough.
Serving Options
- Plain old steamed white rice or even this Chinese Fried Rice is awesome with these short ribs;
- Sauteed Broccolini is a perfect side dish for rich beef short ribs;
- Some good old Garlic Mashed Potatoes or even the Mashed Sweet Potatoes are a great option;
- Try these Brazilian Black Beans from Skinny Taste;
- Traditional Creamy Polenta from A Couple Cooks.
Make Ahead Options
Definitely! You can follow all the recipe instructions, then store the short ribs (with the cooking liquid) in the fridge in a covered container for up to 3 days.
Just reheat in the oven, on the stove top or in the microwave and serve with any of the suggestions above. I find the microwave to be the most convenient.
Freezing Options
They can be frozen in an airtight container for up to 3 months. Thaw in the fridge overnight then reheat in the microwave, the oven or in a pan on the stove. The microwave is the most convenient way in my opinion.

Instant Pot Beef Short Ribs
Ingredients
- 2 pounds beef short ribs (about 4 medium sized ribs)
- 3 teaspoons salt (2 for seasoning the beef, 1 for the cooking liquid)
- 1 teaspoon black pepper (for seasoning the beef)
- 1 tablespoon coconut oil
- ¼ cup apple cider vinegar
- 3 tablespoon lime juice
- 3 tablespoon mirin
- ¼ cup beer (a light beer like a lager)
- 2 teaspoons soy sauce
- 1 tablespoon tomato paste
- 3 garlic cloves smashed
- 2 teaspoon churrasco seasoning
- Chimichurri sauce (optional - for serving)
Instructions
- Let the short ribs come to room temperature (about and hour) and season generously with salt and pepper.
- Heat the coconut oil in a cast iron skillet and add the short ribs. Brown on both sides (about 3-4 minutes/side).
- Add all remaining ingredients (except chimichurri) to the Instant Pot and mix to combine.Â

I just got an instant pot and I’m trying this recipe! Can I use boneless ribs? Will it change the cooking time? Thank you.

If they are boneless short ribs, it should be about the same. But if it is just boneless ribs, the result will not be the same as the short ribs have the fat and cartilage needed to make the meat tender. I haven't tried boneless ribs, but I would reduce the cook time to about 30 minutes for just plain boneless ribs and see if that works. If they are not tender enough, you can always put them in for more time. Good luck and have a blast with that instant pot!
