This Homemade Creamed Corn recipe is sweet, rich and buttery, with a spicy kick...and it's ready in just 20 minutes in the Instant Pot!
Sweet corn wrapped in a velvety sauce of cream, butter and cream cheese...it makes all your sorrows disappear.
Ok, maybe that's a slight exaggeration, but you get it. It's good. So soul warmingly good it makes you feel all cozy inside. Kinda like this Pot Roast or these Braised Beef Short Ribs - this corn would go great with either!

What is Creamed Corn?
Creamed corn is corn cooked in butter and a creamy sauce (typically). It can be made with frozen, fresh or canned corn. Corn can be grated or cut to release the corn "milk" which helps it to thicken the creamed corn.
Sometimes the corn is cooked with a small amount of blended corn to thicken it up.
In any way, it is basically corn cooked in a creamy sauce until thickened and delicious. Yes, creamed corn is DELICIOUS!

Why This Recipe Works
- It uses ingredients that are likely already available in your pantry - or at least easy to find at the store;
- The Instant Pot cooks the corn quickly under a ton of pressure, so it comes out all thick and creamy;
- You can add mix ins like bacon, ham, peppers, etc. to make this even better!
Step By Step Instructions
Step 1: Combine all ingredients in the Instant Pot (I use a 6 quart 9-in-1 but any Instant Pot or pressure cooker will work).
Step 2: Cook on high pressure for 15 minutes. Use the quick release to release to pressure.
Stir for 2-3 minutes and watch your corn become super creamy and luscious.
Variations
- Crumble crispy cooked bacon on top of the corn;
- Add ½ to 1 cup of diced ham before pressure cooking;
- Add 1-2 diced jalapenos to the corn before cooking;
- Add a diced red bell pepper for some added sweetness before cooking;
- Roasted poblano peppers, green chilies, and onions are a great addition if you want to make it like a dip;
- Make it a meal by adding some cooked chicken!
Great as a side dish, a meal or a dip (serve it with some crackers or chips).

Expert Tips
- Adding the cayenne pepper adds the perfect amount of heat, but you can leave it out of you prefer no spice (I highly recommend using it!!);
- If your creamed corn comes out too thin, take 1 cup of the corn and blend it in a blender. Add it back into the creamed corn. This should help thicken it up.
- Substitute 2 cans of corn for the 32 oz. of frozen corn, or 8 ears of fresh corn off the cob.
- This recipe can be doubled if needed.

Is cream style corn the same as creamed corn? Creamed corn and cream style corn as basically the same thing. However, canned cream style corn tends to be somewhat bland, and usually does not use actual cream like the homemade creamed corn.

Ingredients
- 32 ounces corn canned, fresh or frozen
- 8 ounces cream cheese cubed
- 1 stick butter cubed
- ½ cup whole milk
- ½ cup heavy cream
- 1 tablespoon bacon grease
- 1 teaspoon cayenne pepper

Everytime I make this for a get together everyone raves over it. I add the crispy bacon on top and always blend some of the corn with my immersion blender. For Christmas this year I am going to substitute canned creamed corn for this creamed corn in a recipe for corn bread casserole. What would you serve with this. I like sweet corn. But what would be your go to recipie to have with this. Please.

It would be great served with bbq like ribs, steaks, or roasted chicken. It's also a great side dish for the holidays - goes great with turkey and ham. I personally prefer it with meat dishes like this.

This raring is based on omitting the following: bacon grease (for vegetarians), and cayenne pepper(for young kids who can’t do spice). Overall this dish was ‘meeehh’. I may either just make corn Regular next time or try a different variation of recipes. I wasn’t impressed and there were a lot of leftovers which tell me that others didn’t care for this dish too much either.

This is the BEST creamed corn recipe ever. I omitted the cayenne pepper because there were kiddos, but that didnt matter. This recipe was loved by all! The kids kept wanting extra servings. The adults were groaning in delight. And it was all so freaking easy. If this wasnt also the unhealthiest corn recipe ever I'd make it all the time! So so so delicious, perfect for a special occasion.

This looks delicious! Would the cooking time be the same if I halve the recipe?

It should be the same, but I might be a little concerned about it sticking to the bottom. You might cut it down a few minutes and just simmer it at the end while stirring to make sure it doesn't burn.

I did two cans of 15.5oz corn instead of frozen or fresh and it turned out way too runny (even after 2T of cornstarch slurry and blending a bunch). I’m guessing I definitely need to do 3 or 4 cans and strain them first. Thoughts and possibly modifications to the recipe are welcome. Cheers!

I would definitely strain the cans really well before using them. I would try an extra can, but I would strain that can then blend it in a food processor before adding it. Hopefully that will thicken it up.
