What is Air-Fried Polenta with Dreamy Mushroom Sauce?
It’s basically the coziest, easiest thing you didn’t know you needed. Imagine crispy, pan-fried polenta—but without the hassle of standing over a skillet. Then top it with a rich, savory mushroom sauce that tastes like it came from your favorite neighborhood bistro. It’s a vegetarian-friendly meal (or side!) that feels a little fancy but still fits right into your weeknight rotation.
Never tried polenta before? It’s a traditional Northern Italian dish made from coarsely ground cornmeal, usually cooked into a creamy, porridge-like consistency. But the magic for busy home cooks (and tired moms!) is the pre-cooked version that comes in a tube—just like the one in this recipe. It’s fully cooked, firm, and ready to go. All you have to do is slice, heat, and crisp. No stirring. No waiting. Just delicious, golden rounds ready for their mushroom moment.
What Does Polenta Taste Like?
Mild, slightly sweet, and a little nutty. Think of it like the Italian cousin of grits—but a bit firmer and more neutral in flavor, which makes it perfect for pairing with sauces, veggies, or proteins.

Step by Step Directions

Step 5:Place cooked polenta on a plate and top with mushroom sauce.
Expert Tips
- Don’t crowd the air fryer. Give those polenta slices room to breathe for max crispiness.
- Use milk instead of water for a thicker, richer sauce that leans extra indulgent.
- Add herbs! A sprinkle of thyme or rosemary into the sauce? Chef’s kiss.
- Make it vegan with plant-based mushroom soup and a dairy-free milk alternative.

Common Questions
Absolutely! Just make sure it’s firm and fully chilled before slicing and air-frying.
No worries—pan-fry the polenta slices in a bit of oil over medium heat until golden on both sides.
Both! Serve as a light dinner, a hearty side, or the base for even more veggie magic.
Storing Instructions
Store: Keep polenta and sauce in separate airtight containers in the fridge for up to 3 days.
Reheat: Air fry polenta again to re-crisp or warm in a skillet. Sauce can be reheated on the stovetop or microwave.
