Oh, good old asparagus. I love it. But I do wish it weren’t so pricey! Yes…I am cheap by nature, I think it is ingrained in my being. Drives the boyfriend crazy sometimes!

Asparagus is one of my favorite vegetables. I’m not going to say favorite on the off chance that we still consider potatoes vegetables? Cause I LOVE potatoes. Mashed and fried and baked…oh my. But I’m pretty sure we’ve moved potatoes to the starch category, making asparagus my favorite. Even though it makes your pee smell weird. Yes, I know that’s gross, but it’s true and I had to say it.
The best thing about asparagus is how good it is just simply cooked. Roasted with just a touch of lemon and butter, it is perfection. It’s also delicious blanched and thrown in a salad, or maybe even eaten raw. Personally, I prefer it cooked, but ask my mom and she’ll claim it’s amazing raw…

But today we’re here to learn how to make this super easy Parmesan roasted asparagus recipe. A touch of parmesan cheese and fresh garlic make the asparagus sing! Well, maybe it makes me sign while eating the asparagus. That’s probably more believable that the actual asparagus singing. Note: I don’t actually sing. I just really like the recipe.
We want to trim the woody ends off the asparagus first. I typically take between 1-2 inches off the bottom. You don’t want to leave that stringy part on your asparagus! I also like to use a lemon infused olive oil for an extra fresh taste. Obviously this is optional, but it really adds that extra level of flavor to this dish.
Tossed with a healthy amount of olive oil and parmesan cheese, the asparagus is roasted for a quick 12-15 minutes. That’s right. It takes less than 20 minutes to make this easy Parmesan roasted asparagus recipe.
NOTE: If your asparagus stalks are very thick, you made need to roast them for a few extra minutes.
- 1 lbs. asparagus ends trimmed
- 4 tbsp. olive oil
- 4-5 tbsp. fresh grated Parmesan cheese
- 3 garlic cloves minced
- 1/2 tsp. black pepper
- 1/2 tsp. sea salt
- Preheat the oven to 400 degrees.
- Place asparagus on a baking sheet.
- Mix remaining ingredients in a bowl.
- Pour the mixture over the asparagus and mix well.
- Roast for 12-15 minutes (depending on size of asparagus stalks).
I use a lemon infused olive oil to add an extra boost of fresh flavor to this dish.
You may need to roast your asparagus for a few extra minutes if the stalks are very thick.
