This Warm Curried Zucchini and Chickpea Salad is the perfect winter salad, warm and bursting with flavor!
As we start rolling into the cooler season, I have become a little more open to turning my oven on. This warm curried zucchini and chickpea salad is a perfect warm, comforting salad and it’s still HEALTHY. Healthy comfort food is awesome. You know that happy contented feeling you get when you curl up with a warm bowl of macaroni and cheese or curry udon?
I love that feeling (well…until it turns into shame and regret after I’ve eaten the entire pan…).
Now I’m not going to try to tell you this salad gives you the exact same feeling…it is still salad. But it comes close. There’s just something about that slightly spicy curry flavor that makes me feel so good.

Zucchini and onions and chickpeas, oh my! This warm curried zucchini and chickpea salad is wonderful to bring for lunch, requiring just a quick reheat in the microwave…or eat it cold.
It’s super easy to make, and the chickpeas add a great amount of protein to the dish! Vegetables, protein and flavor. That’s what healthy food is about, right?
This recipe literally takes less than 20 minutes.
First, preheat the oven to 450 degrees.
We start by placing the sliced zucchini, onions, and rinsed chickpeas in a bowl. Just toss it in. Then, in a separate bowl, mix the olive oil, salt, curry powder, garam masala, garlic and lemon juice together.
Pour the mixture over the zucchini mixture and mix well. Use your hands. It’s much easier to mix that way.
Spread the mixture on a baking sheet. I recommend using foil if you don’t want to ruin your pan. As you see, I did not, which makes the boyfriend so upset because he is usually the one to clean the pan.
You know, sometimes I just forget.
Bake for 10 minutes. Garnish with green onions and serve. Delicious and flavorful, this warm curried zucchini and chickpea salad is quick, easy and healthy!

Warm Curried Zucchini and Chickpea Salad Recipe
- 1 1/2 lbs. zucchini thinly sliced
- 1 can chickpeas rinsed and drained
- 2 garlic cloves minced
- 1/2 onion sliced
- 1 tbsp. curry powder Simply Organic Curry Powder Certified Organic, 3-Ounce Bottle
- 1 tbsp. garam masala Simply Organic Garam Masala, 3 Ounce
- 2 tsp. lemon juice
- 3 tsp. sea salt
- 3 tbsp. olive oil
- Green onion to garnish
- Preheat oven to 450 degrees.
- Place sliced zucchini, onions and chickpeas in a bowl.
- In a separate bowl, mix the olive oil, salt, curry powder, garam masala, garlic and lemon juice together.
- Pour the mixture over the zucchini mixture and mix well.
- Bake for 10-15 minutes, until vegetables are tender.
- Garnish with green onions and serve.
