This is one of those recipes I make when I want something good but don’t want to actually cook. It feels fancy enough to serve to guests, but casual enough to make on a random Tuesday night.
I’m firmly in the “more cheese is better” camp, especially when it comes to blue cheese. The way it melts into the tomato juices and olive oil is honestly irresistible. Add that tiny sprinkle of sugar and suddenly everything balances out—salty, sweet, tangy, and rich all at once.
It’s proof that you don’t need a long ingredient list or complicated steps to make something delicious.

The Ingredients

Tomatoes, blue cheese and olive oil - that's it. I do sprinkle just a touch of sugar on top - it helps to bring out the flavor of the blue cheese.
You can buy the blue cheese crumbles, or crumble your own blue cheese. I get a little snobby with my blue cheese and like to buy the good stuff and crumble it myself. But any type of blue cheese will work here.
Best Tomatoes to Use
Always look for plump, red colored tomatoes. I like them to be nice and ripe for this recipe. Heirloom tomatoes are great, as are vine tomatoes or any other kind of plump tomato. Romas will work in a pinch as well.
And if you've got home grown tomatoes then you are one lucky bastard. I don't grow my own tomatoes, but the boyfriend's parents have more tomatoes than they can ever use, so I'm pretty much stocked during tomato season (I guess I'm the lucky bastard). The best tomatoes to use for this recipe are going to be large tomatoes, at least 3-4 inches in diameter.

How Does Blue Cheese Taste?
Blue cheese is a very strong cheese. It is typically very creamy and crumbly with a deliciously tangy, salty, earthy taste. The flavor comes from the veins (the "mold") of the cheese. Don't be scared off by it. It is an incredible cheese.
Step By Step Instructions

Step1: Use large tomatoes, at least 3" in diameter for the best result.
Step2: Slice the tomato's about ¼-½" thick for the best results.

Step3: Cover each tomato with the blue cheese. Sprinkle the sugar evenly across all tomatoes and drizzle with the olive oil.

Step4: Place under the broiler for about 5 minutes, or until the cheese is bubbly and just starting to brown. They are best if served immediately while nice and hot. **Watch them carefully to make sure the cheese doesn't burn.
