These bite-sized Air Fryer Stuffed Mushrooms are the perfect way to change up your appetizers! They’re meaty and delicious with a chorizo filling, smoky flavor and crispy topping!
This recipe is so quick and easy, and the air fryer is the perfect way to make stuffed mushrooms. They bake up quickly and the high heat from the air fryer ensures they don’t turn out soggy!
If you’re planning a night of finger foods with friends, you’ll want to add these stuffed mushrooms to the menu.

What is an Air Fryer?
The Air Fryer is a healthier alternative to frying foods. It's basically a small, powerful convection oven that sits on your countertop.
It circulates hot air around the food you're cooking, which is what gives it that crisp texture that mimics fried food (without all the grease).

I personally use this Ninja MAX XL Air Fryer because it hold 5.5 quarts, which is more than most. It has worked great so far and we just love how easy it is to use!

Ingredients
The following are just a few of the ingredients to make this recipe. For a full list of ingredients and quantities, refer to the recipe card at the end of this post.
You’ll need 16 ounces of whole white mushrooms for this recipe. You can also substitute with baby bellas. Just make sure your mushrooms are large enough to hold the filling. Mushrooms will shrink a little as they cook, so keep that in mind too.
For the filling, you’ll need a ¼ cup of ground pork chorizo. This is a seasoned ground pork sausage with a smoky and slightly spicy flavor. If you can’t find any chorizo, you can substitute with any type of ground sausage. To keep the smoky flavor, you can add a little smoked paprika to your filling.
To add texture to the filling, a ½ cup of breadcrumbs is added to chorizo. This also helps form a crispy, toasty topping for the mushroom caps.
Two tablespoons of crème fraiche are stirred into the filling, and you’ll need more for serving. If you can’t find crème fraiche, sour cream can be used instead.
While cilantro and Cotija cheese are optional garnishes, we always serve these mushrooms with both. If you have an aversion to cilantro, parsley is a great substitute. And any kind of crumbled cheese will work in place of the Cotija cheese.
Step by step instructions
Remove the stems from the mushrooms so only the caps remain. Wipe any dirt off the outside of the mushroom caps.
Heat a skillet over medium heat and add the butter, garlic and shallot.
Sauté for 3-5 minutes, until softened and fragrant. Stir in the cumin.
Add the chorizo and cook for 3-5 minutes, until browned.
Turn the heat off and stir in the breadcrumbs and crème fraiche.
Add salt to taste, if desired.
Place 1-2 teaspoons of the filling in each mushroom cap and place in the air fryer basket. (You’ll need to air fry in two batches).
Air fry at 350F degrees for 5-7 minutes, until the breadcrumbs are toasted and the mushrooms are cooked.
Drizzle with additional crème fraiche and top with crumbled Cotija cheese and chopped cilantro (optional).
Repeat with the second batch.
Expert tips
- While the recipe calls for white mushrooms, you can also use baby bellas. Just make sure the mushrooms you use are large enough to fit 1-2 teaspoons of the filling.
- Mushrooms start to brown when bruised or cut, so gently rub any dirt off them.
- If you prefer to wash your mushrooms, do so just before using them (they will start to brown otherwise) and make sure they are patted dry with a paper towel.
- To ensure the mushrooms cook evenly, air fry them in a single layer.
- If you have a large toaster oven style air fryer, you may be able to air fry all of the mushrooms in a single batch. If you have a basket style, you’ll need to air fry them in two batches.
- If your air fryer model requires preheating, you should preheat it before adding the mushrooms.
- Different air fryer brands and models can vary, so you may need to adjust the temperature and air frying time slightly for these mushrooms.
Common questions
No, it’s not necessary to wash mushrooms. Just use a dry paper towel to gently wipe any dirt off them. This is the best way to ensure your mushrooms don’t get soggy when cooked. If they have a lot of dirt on them, you can give them a quick rinse with water, but make sure you pat them dry and use them right away as they will start to brown quickly.
Stuffed mushrooms may turn out soggy if they weren’t fully dried after washing or if they were soaked in water. Mushrooms absorb water so you never want to soak them. For the best results, I suggest removing any dirt from the mushrooms using a dry paper towel.
You’ll also want to make sure they’re cooked on a high heat (that’s why the air fryer is so great) and that you don’t overcook them.
For this recipe, you’ll want to set the temperature of your air fryer to 350F degrees. This is high enough that the mushrooms and the filling cook quickly and results in a crispy topping without burning.
At 350F degrees, it will only take about 5-7 minutes to air fry a single batch. (You’ll need to air fry this recipe in two batches).
I think stuffed mushrooms are best enjoyed right away. If you have leftovers, you can store them in an airtight container in the fridge for 2-3 days. To reheat, air fry them at 350F degrees for 4-5 minutes.
Make ahead instructions
You can prepare the filling 2-3 days in advance and store it covered in the fridge. When ready to eat, just stuff the mushrooms and air fry.
You can also stuff the mushrooms a day in advance and store them in a single layer in an airtight container in the fridge until ready to air fry and serve.
