What is Banana Bread With Brown Sugar?
Banana bread with brown sugar is a soft quick bread made with mashed ripe bananas and brown sugar instead of white sugar. Brown sugar adds moisture and a rich caramel-like flavor, making the loaf extra tender and flavorful.
Banana Bread vs. Banana Cake?
There is not much difference between banana bread and banana cake. Banana cake will typically have frosting while banana bread does not.
Banana bread also tends to be more dense than banana cake, which can have a lighter consistency. I prefer the bread to be honest.

Step By Step Instructions
You are just not going to believe how easy this recipe is.

Step1: Start by preheating the oven to 350F degrees. Grease a loaf pan generously with butter or line it with parchment paper.
Step2: Use a fork or a potato masher (I love using a potato masher) to mash the bananas in a bowl. Set aside.

Step3: Melt the butter in a large mixing bowl and add the sugar. Use a mixer to beat it for 1-2 minutes.

Step4: Add the eggs and mix until fully combined. Then mix in the buttermilk, vanilla, honey and Greek yogurt.

Step5: Add the mashed bananas and mix to combine.

Step6: Combine the flour, baking soda, salt and cinnamon in a separate bowl and mix together. Add it to the wet mixture and gently fold.
Do not over mix the batter as that can make your bread come out tougher. It's ok if there are a couple streaks of flour still in the batter.

Step7: Pour the batter into the greased/parchment paper lined loaf pan and bake in the oven for 50-60 minutes. Start with 50 minutes and test doneness with a toothpick. If toothpick comes out clean it's done; if not, place it back in for another 5 minutes.
Step8: Once a toothpick comes out clean, remove the banana bread from the oven and let it cool in the pan for 10-15 minutes.
Remove from pan and let it finish cooling on a baking rack.
Slice and serve with slabs of salted butter. Yes, slabs of butter, that's what it's all about.

ow to Get the Best Texture
- Use very ripe bananas
- Don’t overmix the batter
- Measure flour correctly
- Let it cool before slicing
- Use parchment for even release
Common Mistakes to Avoid
- Using underripe bananas
- Overbaking
- Overmixing
- Slicing too early
- Skipping the toothpick test
Variations
- Banana Nut Bread - Add chopped walnuts or pecans.
- Chocolate Chip Banana Bread - Fold in chocolate chips.
- Streusel Topping - Add brown sugar crumble before baking.
- Muffins - Bake in muffin tins and reduce bake time.
What to Serve With Banana Bread With Brown Sugar
Serve slices with:
- Salted butter
- Coffee or tea
- Fresh fruit
- No-Bake Strawberry Tiramisu
- Southern Peach Cobbler
- Lemon Posset Recipe
Expert Tips
- Use very ripe bananas. The darker they are, the better the flavor. I love getting old discounted ones from the grocery store
- Grease the pan very well so the bread doesn’t stick.
- Don’t overmix once the flour goes in — fold gently.
- No buttermilk? Add 2 tablespoons lemon juice or vinegar to milk.
- Always test with a toothpick in the center to check doneness.
These tips help make sure your moist banana bread with brown sugar comes out perfect every time.
Frequently Asked Questions
The more ripe your bananas, the more moist your bread will be. Also, the use of the Greek yogurt and buttermilk add the the moistness (still a weird word).
I recommend storing banana bread in a plastic bag or wrapping it in aluminum foil to keep it moist. Yes, I will just keep saying moist...moist...moist. Keep it at room temperature.
Use a toothpick to determine doneness. Stick it in the middle of the loaf. If it comes out clean, it's done. If it still has batter on it, cook it another 3-5 minutes and try again until a toothpick comes out clean.
You can also use a thermometer (I use a Thermapen for this) - once internal temperature reaches 190 degrees, it's done.
You can, but the flavor won’t be as rich. Brown sugar gives this banana bread with brown sugar and butter its deep caramel taste.
Yes! Walnuts, pecans, or chocolate chips work great in this homemade banana bread with brown sugar. My husband prefers chocolate chips!
You can replace the yogurt with sour cream or more buttermilk.

The crumb on this banana bread looks terrific! And I totally agree with you on salted butter. Carbs and salted butter are definitely a weakness of mine.

I totally hear ya on the bananas. I don't like them too green, but I don't like them over ripe either....there's a sweet spot and it does only seem to be only a day or so, lol. Luckily my dog loves them any way, but this also looks like a great way to use up those bananas.
Danielle says
LOL, that's funny your dog likes them 🙂 Bananas are tough, I guess that's why we invented banana bread!
